运动饮料工艺条件的研究进展
随着健身潮流的盛行, 由运动引起的机体功能障碍问题备受社会关注, 随之运动饮料作为一种运动功能食品进入大众视野。运动饮料是针对运动人群于运动过程中的机体机能, 在补充人体水分的基础上通过科学研究, 添加一些营养元素而研制成的一种饮料。本文结合运动饮料的概念、发展历程、分类情况, 着重对运动饮料工艺设计方面的研究现状进行综述, 旨在为国内运动饮料的研究工作提供理论参考与技术支撑。
With the popularity of the fitness trend, the problem of physical dysfunction caused by exercise has attracted much attention in the society, and then sports drinks has entered the public vision as a kind of sports functional food. Sports drink is a kind of drink which is designed for the body function of the sports people in the process of exercise, on the basis of replenishing the body water with adding some nutrients. Based on the concept, development and classification of sports beverage, this paper focused on the research status of sports beverage technology design, in order to provide theoretical reference and technical support for domestic sports beverage research.
