超声辅助提取紫薯花青素的研究进展
花青素作为紫薯的主要生物活性物质, 具有抗氧化、预防癌症、预防心血管疾病、保护肝脏、保护大脑、降血糖血脂和阻止脂肪积累以及消除炎症等生理功能, 对于改善记忆力和抑菌也有很好的功效。我国是紫薯的生产大国、资源丰富, 从紫薯中提取花青素降低了花青素的提取成本。超声是一种非热加工的提取技术, 具有节能、省时、高效等诸多优点, 在提取植物花青素的领域越来越受欢迎。本文综述了超声辅助提取紫薯花青素的几种方法及其最新研究进展, 包括超声辅助溶剂法、超声辅助酶法、超声-微波协同法、超声辅助冻结-融解法、超声辅助双水相法, 以期为超声辅助提取紫薯花青素领域的科研工作提供理论参考。
As the main bioactive substance of purple sweet potato, anthocyanin has many physiological functions, such as anti-oxidation, cancer prevention, cardiovascular disease prevention, liver protection, brain protection, blood glucose and lipid reduction, fat accumulation prevention and inflammation elimination. It also has a very good effect on improving memory and bacteriostasis. China is a big country of purple sweet potato production and rich in resources. Extracting anthocyanin from purple sweet potato reduces the cost of anthocyanin extraction. Ultrasound is a kind of non-thermal processing extraction technology, which has many advantages such as energy-saving, time-saving and high efficiency. It is more and more popular in the field of extracting plant anthocyanin. This paper reviewed several methods of ultrasonic assisted extraction of anthocyanin from purple sweet potato and their latest research progress, including ultrasonic assisted solvent method, ultrasonic assisted enzyme method, ultrasonic microwave synergistic method, ultrasonic assisted freezing thawing method and ultrasonic assisted two-phase method, in order to provide theoretical reference for scientific research in the field of ultrasonic assisted extraction of anthocyanin from purple sweet potato.
