Objective To analyze the current situation of nitrite use in meat products sampled in Henan province in 2019. Methods A total of 529 batches of meat products randomly selected in Henan province were tested according to the spectrophotometer method in GB 5009.33-2016 National food safety standard-Determination of nitrite and nitrate in food and the results were evaluated and analyzed according to the GB 2760-2014 National food safety standard-Standard of use of food additives. Results The detection rate of nitrite in meat products was 67%, which was higher, but the most of detection value was lower than 10 mg/kg, far less than the maximum allowable use of nitrite in meat products. Conclusion At present, as a kind of food additive, nitrite is widely used in meat products. Although the detection rate of nitrite in meat is high, it is all in the qualified range.
