Objective To establish a method for evaluating the quality of food safety rapid inspection products based on the principle of chemical colorimetry. Methods The nitrite rapid test reagent product was evaluated by combining the general indicators and the technical indicators to determine the specific index of the quality evaluation. Results The general indicators of the 10 companies' products could not meet the requirements and needed to be improved, the principle of 1 company's products was different from KJ201704 Rapid determination of nitrite in food by naphthalene ethylenediamine hydrochloride method, the color scale cards of the products of 4 companies did not match the actual colors, and the detection limit, the comparison with the reference method and the false negative rate of 1 company's products did not meet the requirements. Conculusion The method comprehensively reflects the quality of the rapid detection product quality, and provides a basis for rationally verifying and evaluating the quality of the food rapid detection product.
