Objective To detect the quality of raw milk before and after the logistics by solid-phase microextraction-gas chromatography-mass spectrometry (SPME-GC-MS). Methods The volatile components in liquid dairy products were analyzed by headspace solid-phase microextraction, combined with GC-MS and purge and trap method to detect chloroform and lipid degradation in milk. Results There were seven kinds of volatile components in the liquid dairy product samples, which were mainly aldehydes and ketones. Through headspace analysis to quantify chloroform contaminants, the extent of lipolysis could be quantified by measuring free fatty acids. Conclusion Fatty acid hydrolyzate can be used as a biomarker for the quality control of liquid dairy product during the logistics process. The sensitivity and reproducibility of solid-phase microextraction can meet the quality control requirements of liquid dairy product during the progress of logistics.
