Objective To monitorthevolatile odor changeof pitaya during storage time at ambient temperature and study the effect of Gilbertella persicariaon odor of fruits. Methods Taking dragon fruit (Hylocereusundatus cv. Zihonglong) as test material, theodor of good fruit and infested fruit with G. persicaria were analyzed by electronic nose.Principal component analysis (PCA) and linear discriminant analysis (LDA) were performed on the response values of different sensors. The contribution rate of the sensor was determined by load analysis (LA). Results Both PCA and LDA could accurately discriminate the volatile odor changes of pitaya fruit during storage and the change of odor infested fruit by G. persicaria. The results of load analysis method showed that the W1S and W1W sensors played a major role during the storage of dragon fruit, and the W1W and W2W sensors were mainly used to identify the changes in odor after pathogen infection. Conclusion Electronic nose detection technology can quickly distinguish the storage time of pitaya fruit and the change of fruit odor after G. persicariainfection.
