大连市沙河口区学生营养午餐供餐企业量化考核及满意度调查
目的 了解当前大连市沙河口区学生营养午餐供餐企业的量化考核及满意度, 提出改进措施。方法 按照典型调查的原则, 采用现场观察法和问卷调查法, 对大连市沙河口区13家学生营养午餐供餐企业进行调查。结果 供餐企业在生产合理布局、卫生设施、标识、操作人员培训、供餐时间等方面存在问题较多。只有2家企业推行危害分析和关键环节控制点(hazard analysis and critical control point, HACCP)食品安全管理体系。企业的评分基本与对营养餐质量满意度相一致, 营养午餐满意度较低。结论 供餐企业仍应加强生产布局的合理性, 加强卫生设施的改进, 健全标识, 加强操作人员培训, 确保供餐时间。提倡在企业中推行HACCP食品安全管理体系, 努力提高学生营养餐的质量, 提高满意度。
Objective To study quantitative assessment and satisfaction of catering services for student lunch in Shahekou district of Dalian city and to put forward improving measures. Methods By typical investigation, 13 catering services for student lunch in Shahekou district of Dalian city were surveyed using field observation and questionnaire method. Results The catering services had many problems in the layout of the production, the health facilities, and the identification, the training of the operator and the time of the meal. The hazard analysis and critical control point (HACCP) of food safety management system were implemented in only 2 catering services. There was a consistence between the score of catering services and the satisfaction of the quality of lunch. The satisfaction of nutritional lunch was lower. Conclusion The catering services should be improved in the layout of the production, the health facilities, the identification, the training of the operator and the time of the meal. HACCP food safety management system should be implemented in catering services. The quality of students' nutrition meals and satisfaction should be improved.
