餐饮服务环节兽药残留的标准制定和应用
本文从餐饮服务环节中兽药残留标准涉及的兽药种类、食品种类、残留限量值三个层面逐级分析, 提出了餐饮服务环节兽药残留主要拟检测品种, 综述了生食水产品、熟肉制品、乳制品中兽药残留的检测方法及其国内外的限量值差异, 并对适用于餐饮服务环节兽药残留的现场快速检测技术前景进行了展望。
In this paper, veterinary drug residues, varieties of food products and maximum residue limits which were relevant to veterinary drug residue standards in catering service industry were analyzed successively. The main categories of food which were supposed to be monitored in catering service were listed. Addi-tionally, the detection methods of veterinary drug residues in raw aquatic products, ready-to-eat meat, dairy products and the differences of maximum residue limits between china and other countries were overviewed. Finally the foreground of on–site rapid detection technique of veterinary drug residues in catering service was prospected.
