统计过程控制SPC与HACCP体系的结合应用
本文简要介绍了统计过程控制(SPC)和HACCP的基本思想,进而阐述SPC与HACCP结合应用的理论基础,通过脱水蒜粒生产过程中的大肠菌群卫生控制为例,说明SPC与HACCP结合应用的方法,食品生产企业在生产过程中应用SPC,可以不断改善过程控制,从而确保食品安全。

This paper briefly describes the basic idea of statistical process control(SPC) and HACCP,and elaborates theoretical basis of the combined application of SPC and HACCP.To illustrate it,we take the coliform bacteria control process in dehydrated garlic granules production for example,food producers can use SPC in production process to improve the control of the process and ensure the food safety.
