代谢组学技术在食品安全中的应用
随着我国经济和社会的持续较高速度发展以及人民生活水平的提高, 对食品安全提出了越来越高的要求。近年来, 我国出现了许多令人忧虑的食品安全问题, 食品安全风险监测工作正面临着巨大的挑战。代谢组学是通过考察生物体系受刺激或扰动后, 代谢产物的变化或其随时间的变化的一个新兴的重要组学技术, 在药物研究、疾病诊断、植物育种、环境科学等很多领域中得以广泛应用。本文在介绍了目前我国食品安全监测中存在的问题之后, 对代谢组学技术在食品安全领域中的应用研究进行了全面的综述, 表明了代谢组学技术在食品中兽药残留、禁用物质、转基因食品、食品掺假和食源性疾病等检测方面有着良好的应用前景, 但在实际应用中依然存在一些问题有待进一步研究, 为应用代谢组学开展食品安全风险监测与评估提供一定的参考。
The quality and safety of food is a major benchmark of the economic development and people’s living conditions of a country. In recent years, several cases of the food scandal have been disclosed on various media. Food safety risk monitoring work is facing the huge challenge. Metabonomics mainly investigates the change of endogenous metabolism of biological system that is stimulated or disturbed, and studies the metabolic pathways of biological system. Metabonomics is an emerged important research tool of system biology in drug discovery, disease diagnosis, plant breeding and environmental science. In this review, we gave an overview of some food safety problems that have had a major impact on public health over the last several years in China and how metabonomics can be used to tackle the issue of food safety. The review showed that metabonomics had favorable the applying prospects in residues of veterinary drugs, banned substances, genetically modified food, food adulteration, foodborne illnesses. However, there were some problems in the practical application, which needed to be further in-depth study. This review may be valuable for the further study.
