昆明市售花生酱和芝麻酱的菌相初步分析
目的 了解昆明市售花生、芝麻酱的菌相组成情况及其微生物污染风险。方法 将16份昆明市售花生、芝麻酱进行增菌培养后, 取增菌液进行DNA的提取, 然后进行基于16S rRNA的宏基因组测序和分析。结果 细菌主要来自于厚壁菌门和变形菌门, 共检测出了40个细菌的属, 其中包含多个含有致病菌的属。农贸市场采集样品中检测到的细菌属种类显著高于超市采集的样品。结论 昆明市售花生、芝麻酱存在一定的微生物污染风险, 农贸市场所售该类产品较超市产品存在较大污染风险, 应引起重视。
Objective To understand the bacterial phase composition and the risk of microbial contamination of peanuts and sesame paste sold in Kunming. Methods Sixteen samples of peanuts and sesame paste sold in Kunming city were cultured for bacteria enrichment, and then DNA was extracted from the bacteria solution, and then macro genome sequencing and analysis were performed based on 16S rRNA. Results Bacteria were mainly from Firmicutes and Proteobacteria, and a total of 40 genera of bacteria were detected, including several genera containing pathogenic bacteria. The bacteria species detected in the samples collected from farmers’ markets were significantly higher than those collected from supermarkets. Conclusion Peanut butter and sesame paste in Kunming market exist some risk of contamination from microbial. Especially, we should pay more attention on the peanut butter and sesame paste from farmers’ market, those have a greater risk of pollution than those sold in the supermarket.
